Guy Horley --- Company owner and Chef
I have worked in pubs and restaurants part-time since the age of thirteen, starting at the very bottom and working my way up.
At sixteen I went to Aylesbury college in Buckinghamshire and did two years of formal training in all aspects of food preparation , cooking and service thus gaining the relevant qualifications.
I then went on to work in a number of award winning pubs and restaurants working my way up through the ranks and learning all the different sections in the kitchen.
At my first job as Head Chef, at The Walnut Tree Hotel , North Petherton, I gained AA and RAC awards within three months of being there, something that no other chef has done there before. Also at my most recent position at The Rising Sun Inn,West Bagborough I gained entry into the Michelin and Egon Ronay guides within a short space of time.
My style of cuisine is quite traditional and classical with a modern rustic twist, I use only fresh ingredients and try to use local produce whenever possible.

After leaving school in 1993, I went into the hotel business for seven years. I gained valuable experience of catering, the running of restaurants and bars, and eventually ending up as Head Receptionist in a large New Forest Hotel: it was here that I met Guy.
We came to live in Somerset in 1999 and I joined the Volkswagen main dealership in Taunton in 2001 where I worked in the Accounts department, eventually becoming its Manager.
My knowledge and experience of the catering trade and accounting is invaluable in the organisation and administration of Top Class Catering.
Our combined experience ensures the smooth running of our business.
